To facilitate access to strains in the probiotic field, it is common to use industrial banks of lactic ferments. These strains, initially intended for agri-food companies (cheese factories, dairies, etc.), are multiplied individually from synthetic broths. These manufacturing processes were not originally designed for the development of food supplements.
